I haven't made this in years but I remember it was really good!
Chocolate Eclair (make 2 days ahead)
1 pkg.French Vanilla Instant Pudding 3 cups milk 1 9 oz. Cool Whip Box Graham Crackers
Butter bottom and sides of 9 x 13 pan. Lay whole graham crackers on bottom of dish.
Prepare pudding with 3 cups of milk. Add cool whip; mix well. Spread half of pudding mixture over crackers. Add another layer of crackers; top with the remainder of pudding. Add another layer of crackers; top with icing. Refrigerate 2 days before serving.
Icing: 2 squares unsweetened chocolate 3 Tbsp. Margarine 1 1/2 cups powdered sugar 3 Tbsp. milk 3 Tbsp. white Corn Syrup 1 Tbsp. vanilla
Melt chocolate and margarine; combine with remaining ingredients. Spread icing over top of eclair and cover.
