SUPER 6-LAYER CASSEROLE
1 cup uncooked long-grain rice 1 pound ground beef, browned and drained 1 cup sliced onion 1 green bell pepper, diced 2 cups chopped carrots 1/2 teaspoon salt 1/2 teaspoon basil 2 cups tomato juice 2 tablespoons Worcestershire sauce 1 cup shredded Cheddar cheese (for topping)
In greased 3-quart casserole, arrange in layers: rice, browned beef, onion, green bell pepper, and carrots. Sprinkle with salt.
Combine basil and liquids; pour over casserole. Top with shredded cheese.
Bake, tightly covered, at 350 degrees, for about 1 hour, or until vegetables and rice are tender.
