PEPPERONI
5 pounds hamburger 5 teaspoon Morton Tender Quick 5 teaspoon mustard seed 5 teaspoon course ground pepper 2 teaspoon hickory smoke salt 4 teaspoon garlic salt 1/2 teaspoon crushed red pepper 1 teaspoon fennel seed 1/2 teaspoon anise seed
First day: Mix all ingredients in a large bowl and refrigerate.
Second & Third day: Re-mix and refrigerate.
Fourth day: Set oven at 150 degrees. Separate mix into 5 rolls. Place on a broiler rack on the bottom shelf of the oven. Cook 8 hours, turning every 2 hours.
