Banana Buttermilk Cake (microwave) rec.food.recipes/Robert & Keri Cathey (2000)
2 1/2 cup flour 1 cup brown sugar 1 tsp. salt 2 eggs 1/2 cup buttermilk 1/2 cup chopped nuts 3 tsp. cinnamon 3/4 cup sugar 1 tsp. nutmeg 3/4 cup cooking oil 1 tsp. baking powder 1 tsp. soda 1 cup mashed bananas
Blend flour, sugars, nutmeg, salt and oil to make a crumbly mixture; set aside 1 cup of this mixture. To rest, add eggs, baking powder, buttermilk mixed with soda, and bananas. Stir until smooth batter is formed. Pour in greased 12 x 8 x 2 inch dish. Over cake sprinkle reserved crumbs; top with nuts and cinnamon. Microwave at high 12 minutes. After cake has cooled 10 minutes, you can drizzle with thin frosting if desired.
