Cherry Almond Upside Down Cake

2 tablespoons margarine
1/4 cup brown sugar
1/4 cup almond slivers
2 cups cherries, frozen
1/4 cup margarine
2/3 cup sugar
1 egg
1/2 teaspoon almond extract
1 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup low fat 2% milk

Combine butter and brown sugar in 9-inch round cake dish. Microwave on HIGH for 1 to 1 1/2 minutes or until margarine is melted. Add almonds and cherries. Microwave HIGH uncovered for 3 to 4 minutes to thaw cherries. Set aside.

Microwve HIGH butter for cake in microwave safe mixing bowl. 30 to 45 seconds or until softened. Beat in sugar until creamy. Add egg and almond extract; beat until light. Add flour, baking powder, salt and milk; mix just until smooth. Pour batter into pan. Microwave on MEDIUM-HIGH (70%) uncovered, 8 to 9 minutes or until edges are set, rotating pan once. then, microwave HIGH 3 to 4 minutes until center is set, rotating pan once. Let sit in oven 5 minutes. Invert onto serving plate. Serve warm or cool. If desired, top with whipped cream and toasted almonds.
