Lemon Pie Filling (microwave) rec.food.baking/Wing Lee (Roseanne) (2001)
My daughter loves lemon meringue pie and this is the only recipe I use. It's a fast and easy microwave recipe needing only one bowl to use instead of double boilers and pots. This comes from the Panasonic microwave cookbook and the recipe is for the filling only.
1 1/2 cups sugar (I cut the 1/2 to 1/8 only because we don't like things over sweet) 1/3 cup cornstarch 1/4 tsp salt 1 1/2 cups boiling water 3 eggs separated 1/2 cup plus 1 tsp lemon juice 3 tablespoons butter
In a 3 quart casserole dish or bowl. Combine sugar, salt and cornstarch. Stir in boiling water. Cover with lid. Cook on high x 10-12 min or until thickened. Stir in small amount of hot mixture into egg yolks; return to hot mixture, beating until well blended. Add lemon juice and butter. Pour into precooked pie shell.
Then you can beat up your own meringues and cover. I like to use a whisk to mix everything as I find a whisk blends faster and more thoroughly. My daughter often loves this without a crust so I just pour into a pie plate, top with meringues and she eats her crustless pie. This recipe has never gone runny or failed.
