Chocolate Chip Mini Muffins
rec.food.baking/Tiffany (1998)

This is my mother's recipe, she made them last weekend. They are really good.

1/2 cup sugar
1/4 cup shortening
1 egg
1/2 cup milk
1/2 tsp. vanilla
1 cup flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
2/3 cup miniature semi-sweet chips

In large bowl, cream sugar & shortening until fluffy. Add egg, milk and vanilla; mix well. Combine dry ingredients. Gradually add to creamed mixture; mix well. Fold in chocolate chips. Spoon one tablespoon into greased or paper-lined mini-muffin cups. Bake at 375 for 10-13 minutes. Cool in pan 10 minutes before moving to wire rack.
