2 cups flour 1 Tbsp baking powder 1/2 tsp salt 2/3 cup sugar
1 egg, beaten 1/3 cup butter, melted 1/2 cup milk
1 Tbsp grated lemon rind 1 1/2 cups peeled kiwis, chopped 3/4 cup walnuts, chopped
Preheat oven to 400 deg F. Sift together the first 4 ingredients. Stir in the egg, butter, and milk, just until moistened. Fold in the lemon rind, kiwis, and nuts. Fill paper-lined muffin tins full, and bake approximately 20 minutes. |
