Hi everyone:
I cut this recipe out of my newspaper last week and decided to try it. I liked the fact that it made two loaves so I could freeze one for when I have unexpected guests. Everyone liked it, even the kids.

Zucchini Bread

3 eggs
2 cups sugar
1 cup oil (I used olive)
1 tablespoon vanilla
2 cups zucchini, coarsely grated
2 cups flour
1 tablespoon cinnamon
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 cup chopped walnuts

1. Preheat oven to 350 degrees. Grease and flour two loaf pans.

2. Beat eggs until frothy. Beat in sugar, oil and vanilla until mixture is thick. Stir in zucchini.

3. Sift flour with cinnamon, baking soda, salt and baking powder. Stir into zucchini mixture. Stir in walnuts.

4. Bake 1 hour or until a toothpick inserted at center comes out dry. Makes 2 loaves.
