Sun-Dried Tomato Bow Tie Pasta Salad rec.food.cooking/Bruce Hietbrink (1995)
Here's a recipe for a pasta salad that I like. I just picked this up by looking at a salad at a deli, so I don't have exact amounts, but it is pretty permissive. Every time I do it is a unique creation. Credit for the inspiration goes to the deli counter at Wild Oats grocery in Pasadena, CA. The above is loosely based on a pasta salad they served. Other small pastas work as well.
bow tie pasta, cooked, drained, cooled to room temperature sun dried tomatoes, plumped by soaking in warm water, drained parsley, chopped fine green onions, chopped (the green parts) pine nuts freshly grated parmesan cheese olive oil splash of balsamic vinegar black pepper, to taste
While the pasta is cooling, lightly roast the pine nuts by putting in an open pan and dry roasting on top of the stove, shaking occasionally.
Combine the cooked pasta, drained tomatoes, parsley, green onions and pine nuts, mix thoroughly. Add the cheese, olive oil and balsamic vinegar, mix. Put in the fridge to chill.
