Chicken-Zucchini Dish: Servings: 4
3/4 cup chopped onion 1 1/2 cups diced celery 3 large tomatoes (fresh or canned) 1/2 cup tomato juice 2 cups chicken broth 2 Tbsp. cornstarch, softened in 1/4 c. water Parmesan cheese 1/2 small pkg. egg noodles (about 2 cups),or rice may be substituted 2 tsp. salt Pepper 2 cups peeled, cubed zucchini 1 cup diced, cooked chicken 2 Tbsp. margarine (or butter)
Cook noodles according to package directions. Saute onions and celery in margarine for 5 minutes.
In a large Dutch oven, combine tomatoes, tomato juice, chicken broth, celery and onions. Cook till celery is tender. Add zucchini, cook 5 minutes.
Stir softened cornstarch into the mixture. Cook 2 minutes. Add diced chicken.
Serve over hot cooked noodles, topped with Parmesan cheese.(Rice may be substituted for noodles if preferred.)
