Broccoli with Black Olives: Serves: 4
1 bunch (about 1 1/2 lbs.) fresh broccoli, trimmed 3 Tbls. olive oil 1 garlic clove, chopped fine salt and freshly ground pepper to taste 1/4 cup small black olives, pitted and cut into small pieces 3 Tbls. grated Parmesan cheese
Parboil the broccoli about 2 minutes in a small amount of salted water. Drain and reserve liquid.
Heat the oil, add the garlic and saute till light brown. Add the broccoli & season with salt and pepper. Cook slowly over low heat 10 minutes, adding a little of the water in which the broccoli was cooked, if the pan gets too dry.
Add the olives and heat 2 minutes longer. Serve immediately sprinkled with the grated cheese.
