Baked Acorn Squash: Serves: 6
3 acorn squash grated nutmeg or ground ginger to taste pinch of cinnamon pinch of salt & freshly ground pepper 3 tsp. brown sugar, or more to taste 6 tsp. butter 6 tsp. sweet sherry, (opt.)
Preheat oven to 325 degrees f.
Split the squash into halves and scoop out the fibers and seeds.
Sprinkle the cavity of each half with the spices, brown sugar and a teaspoon of butter.
Bake for 30-45 minutes, or till flesh is tender. Five minutes before serving add a teaspoon of sherry to each cavity. (After this point these may be finished on the grill, cooking for 5- 10 minutes over hot coals to get a smoky taste, which enhances the flavor). |
