Cucumber Salad
Serves: 6

3/4 cup sour cream
1 Tbls. chopped green onion or chives
1/2 tsp. salt
freshly ground pepper to taste
1/2 tsp. ground cumin
2 Tbls. vinegar
2 medium cucumbers, pared, seeded and sliced thin (about 3 cups)
Lettuce or other salad greens
Paprika

Mix the sour cream, onion, salt, pepper, cumin and vinegar. Add cucumbers and toss lightly.

Serve on lettuce with a sprinkling of paprika.
