Southwestern Vegetable Rice rec.food.recipes/Katherine Gotts (2001) Makes 6 servings
2 cup chicken broth 1 cup uncooked rice 2/3 cup diced green pepper 2/3 cup chopped tomato 1/2 cup chopped onion 1 Tbsp margarine 1 tsp chili powder 1 tsp ground cumin 1/4 tsp ground red pepper
Combine all ingredients in a 2 to 3 qt saucepan. Bring to a boil, stir once or twice. Reduce heat; cover and simmer 15 min or until rice is tender and liquid is absorbed. Fluff with fork.
