MAMA'S FRESH PEACH PIE

1 cup sugar
3 tablespoons cornstarch
1 cup water
4 tablespoons peach Jello
1/2 cup sugar
1 (8 oz.) pkg. cream cheese, softened
4-5 fresh peaches
1 9-inch deep dish pie crust, baked and cooled
Cool Whip

Mix one cup sugar, cornstarch, and water in a saucepan. Boil until thick and clear, then add dry peach gelatin. Let that cool while mixing 1/2 cup sugar and cream cheese; cream together until smooth, then spread in bottom of cooled pie crust. Combine the cooled gelatin mixture and the peaches. Spoon this on the pie
crust/cream cheese mixture. Refrigerate until cold. Top with Cool Whip, if desired.

Yield: makes 1 pie
