Moye's Banana Bread rec.food.recipes/steve and michelle moye (1997)
This is an awesome recipe for banana bread. The secret is the small amounts of coconut and rolled oats that give it a moist, chewy texture.
1/3 cup granulated sugar 1/3 cup brown sugar 1/3 cup butter-flavored Crisco (vegetable shortening) 1 tsp vanilla 2 eggs 2 large or 3 small, ripe bananas 1/4 cup sweetened bakers coconut 1/2 tsp salt 2 1/4 tsp baking powder 1 3/4 cup all-purpose flour 1/2 cup rolled oats 3/4 cup chopped walnuts
Preheat oven to 350 degrees. Cream sugars and Crisco. Add eggs, vanilla, and mashed bananas. Stir in remaining dry ingredients, coconut, and walnuts. Pour into well-greased loaf pan. Bake 1 hour, or until toothpick inserted in center comes out clean.
