EGGPLANT CASSSEROLE-FRANKES Recipe By : NANA
1 large eggplant -- cubed 1/2 teaspoon salt pinch pepper 2 cups tomatoes -- drained well 1/2 cup onion -- chopped fine 2 large egg -- beaten 2 cups cornbread -- crumbled milk cheese -- grated
Boil eggplant until tender. Drain thoroughly. Add salt and pepper. Mash with potato masher. Mash tomatoes. Combine tomatoes, onion,eggplant, eggs and cornbread crumbs. Pour into greased casserole. Add enough milk to cover. Top with grated cheese. Bake at 375 degrees about 1 hour.
** green chopped peppers can also be added with onion.
