Oat Hot Cakes
Makes 12-15 Hot Cakes

1 cup old-fashioned oatmeal (uncooked)
1/2 cup currants, raisins, dried blueberries, cherries or cranberries
1 1/2 cups milk, divided
2 eggs
1/4 cup melted butter or margarine
1/2 cup all purpose flour
1 Tbls. sugar
2 tsp. baking powder
1/2 tsp. salt

Put oatmeal and dried fruit in a bowl, pour over 1 cup milk. Cover and refrigerate overnight.

Beat eggs well, add to oatmeal mixture with 1/2 cup of milk and butter. Beat to blend. Combine flour, sugar, baking powder and salt, add to oatmeal and mix well. Using a salt bag, lightly oil a hot griddle.

Use 1/4 cup batter for each hot cake. Cook till bubbles form and break on top and edges lose their "wet" look. Turn and brown second side, about 1 minute for each side.
