SKILLET COOKIES
Makes about 5 doz. cookies.

2 Tbsp. butter or margarine
1 cup finely cut pitted dates
1 cup granulated sugar
2 eggs
3 cups popped rice cereal
1/2 cup chopped nutmeats
Confectioners' sugar

Melt butter in large skillet. Add dates, granulated sugar and eggs. Cook over low heat, stirring constantly until mixture forms a ball, 5-8 min. Cool slightly and stir in cereal and nuts, mixing well. Sprinkle confectioners' sugar lightly on waxed paper. Shape cookie mixture into two rolls, about 2 inches in diameter. Roll in confectioners' sugar and wrap in paper. Chill. To serve, cut into slices about 1/4" thick.
