Banana Bread or Muffins (with orange peel and pecans)

2 cups bananas, mashed
3 eggs
1 cup vegetable oil
1 teaspoon vanilla
2 cup flour
1 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon orange peel
1 cup pecans, chopped

Combine banana, eggs, oil and vanilla and mix well.

Sift flour with sugar, soda and salt and add to banana
mixture. Pour batter into greased and floured loaf pan.

Bake 350F for 50 minutes.

Bake muffins at 350F for 25 minutes.

Yield: 1 loaf or 16 muffins
