Spring Pea Salad Serves: 6-8 This is our favorite pea salad!
1 (10 oz.) bag frozen peas 1 cup finely diced celery 1/4 cup diced green onions 1 cup finely chopped fresh cauliflower 2 Tbls. chopped pimento, opt. 1 cup chopped cashews (or salted sunflower seeds may be substituted) 1/4 cup bacon, crisply fried & crumbled 1/2 cup sour cream 1 cup Ranch dressing 1/2 tsp. Dijon mustard 1 small garlic clove,minced
Rinse peas in hot water,drain well.
Combine sour cream, Ranch dressing, mustard & garlic in bowl, after mixing thoroughly, pour over & toss with the vegetables, nuts, & bacon. Chill 4 hours.
