The Ozark's Nut and Apple Pudding

2 eggs
1 1/2 cups sugar
4 Tbls. flour
2 tsp. baking powder
1/8 tsp. salt
1 cup black walnuts
3 Missouri Apples, (or Granny Smith) peeled & diced
1 1/2 tsp. vanilla

Beat eggs & sugar till smooth. (Do not over beat.)

Add flour, baking powder, salt, apples & vanilla.

Bake in a 8" x 10" lightly greased shallow pan at 350 degrees for 35 minutes.

Serve with whipped cream or ice cream.
