Chicken Nectarine Salad:
Serves 4
Source:Creative Cooking,Poultry.
1 c.shredded cooked chicken
1/4 c.grated zucchini
1/4 c.grated carrot
2 Tbls.finely chopped scallion
2 tsp.tarragon wine vinegar
1 tsp.salad oil
1/4 tsp.seasoned salt
2 fresh nectarines
3-4 Tbls.mayonnaise
crisp lettuce
Toss chicken,vegetables,vinegar,oil & salt together,chill.
When ready to serve,halve nectarines.Remove pit & cut into thin slices.Add nectarine slices & mayonnaise to chicken mixture.
Line salad bowls with lettuce.Spoon chicken mixture on top & serve.
