FRESH SPINACH SALAD Serves 4
1 package fresh baby spinach, ready for serving 3 slices bacon 2/3 cup mix canola and olive oil 1/4 cup Balsamic vinegar 2 tbsp white wine 1 tbsp soy sauce 1 tbsp Worcestershire sauce 1 tsp brown sugar 1 tsp dry mustard 1/2 tsp mild curry powder salt and pepper to taste 2 hard boiled eggs, peeled and chopped 1 red pimento, cleaned and chopped
Wash and dry the baby spinach. Refrigerate. Fry the bacon, drain and crumble. Shake in a covered jar the dressing ingredients, including the oil, vinegar, wine, soy sauce, Worcestershire sauce, sugar, mustard, curry powder and salt and pepper, until well blended. Pour the dressing over the spinach, and add the chopped pimento, tossing for color. Sprinkle with the crumbled bacon and chopped egg. Serve at once.
