This is one of our favorite sandwiches.

Avocado
Tomato
Red onion
Hoffman's sharp slicing cheddar (from the deli) or sliced swiss cheese
Alfalfa sprouts
Cucumber, very thinly sliced (optional)
Original Branola bread, Freihofer's Canadian Oatmeal bread or other bread of this type
Mayonnaise (Hellman's or Best Foods)
Salt and pepper

Spread each slice of bread lightly with mayonnaise. For each sandwich, put a slice of cheese on one slice of bread. Lay thinly sliced avocado (about 1/4 of an avocado per sandwich) on top of the cheese. Next lay sliced tomato on sandwich and sprinkle with salt and pepper. Then add cucumber, if using, thinly sliced red onion (to taste) and lastly the alfalfa sprouts. Top with 2nd slice of bread. This is a yummy vegetarian (but not vegan) sandwich that, I think, most meat eaters would like if they like avocados.
