This two recipes are excellent for a late breakfast or bruch. You can add vodka or tequila for cocktails before dinner.
Non-Alcoholic Margaritas
8 Large limes 1 Large Valencia orange 6 Cups cold sparkling or mineral water 3/4 Cup sugar (Nutrasweet may be used in place of sugar) Fresh mint leaves Wash limes and orange. Squeeze limes and orange into pitcher. Place lime and orange hulls into the pitcher. Add in sugar. Crush lime and orange hulls with juice and sugar with wooden spoon. (This releases the citrus oil.) Add water to mixture. Stir mixture well. Sweeten to your own taste.
In a blender, add 1 cup of ice to every 1/2 cup of lime/orange mixture. Blend well until smooth. Pour into chilled margarita glasses. Garnish with a lime.
Mango "Margaritas" Makes 6 eight-ounce servings
3 mangoes, peeled, seeded and cubed 2 cups ice Juice of two limes 1/2 cup orange juice 1 tablespoon honey
Combine all ingredients into a blender and puree until smooth. Serve and enjoy!
