Easy Baked Tomatoes
Wash tomatoes. Hollow out a section from the stem end leaving about 1/4" around the sides. Hole should be about the depth of a soup spoon. Invert to drain and set aside.
Crumble 2-3 slices bread in food processor. Add 1/4 c. Parmesan, 4-5 leaves basil, salt and pepper. Twirl briefly in processor.
Fill tomatoes with crumbs, pressing with spoon to fill. Dot with butter. Bake at 350 about 45 minutes.
