Hot Tomatoes Recipe By :Southern Living Serving Size : 8
8 medium green tomatoes 1 cup corn cut from cob 1 jalapeno -- minced 1/4 cup chopped sweet red pepper 1/4 cup sliced green onions 3 tbl chopped fresh basil 2 tbl chopped fresh cilantro 1 cup (4oz) shredded Monterey jack cheese 1/2 tsp salt 1/4 tsp pepper 1 1/2 tbl cornmeal 1 1/2 tbl butter or margarine
Cut tops from tomatoes; set tops aside. Scoop out pulp, leaving shells intacts; chop pulp, and set aside. Invert shells on paper towels to drain. Combine tomato pulp, corn, and next 8 ingred.; spoon into tomato shells. Sprinkle evenly with cornmeal, and dot with butter. Place reserved tops, cut side down, and filled tomatoes on a lightly greased baking sheet. Bake at 400 degrees for 25 min or until throughly heated. Cover filled tomatoes with tops.
