Roasted Onion Garlic Spread Makes 1/2 cup, 8 servings
2 medium onions 2 teaspoons olive oil 2 teaspoons honey 4 large garlic cloves, peeled 1/8 teaspoon salt Crushed red pepper (optional)
Peel and quarter onions.
Stir together oil and honey in a large bowl. Add onion and garlic, stirring to coat. Transfer mixture to a 2-quart square baking dish.
Bake uncovered in a 350F oven for 30 to 40 minutes, or until the onions are tender and lightly browned, stirring occasionally. Remove from oven and cool.
Puree in a food processor or blender with the salt until nearly smooth. Transfer to a serving bowl and sprinkle with optional red pepper.
