Lemon 7-Up Cake
rec.food.recipes/Linda, Tennessee (2002)

1 box lemon deluxe cake mix
1 small box instant coconut pudding ( 3 1/2 oz. ) or lemon or vanilla instant pudding
1/3 cup oil
3 eggs
10 oz. 7 UP, room temperature

Icing:
2 eggs
1/2 cup butter or margarine
1 cup undrained crushed pineapple
1 1/2 cups sugar

Beat all cake ingredients together and pour into a greased and floured tube pan or 9 x 12 inch oblong pan. Bake 350F about 50 minutes or tested done. Test after 35 minutes as cake has a tendency to brown quickly. Cool to warm and ice.

For icing: cook all the ingredients together in a small saucepan until thick, stirring constantly. Spread on warm cake and let drip over the sides of tube cake or loosen sides of oblong cake so icing can seep into cake.
