Recipe: Quick and Easy Corn Relish (using canned corn)

Quick and Easy Corn Relish

Makes about 3 cups

My Mom made this often and everyone wanted the recipe.

2 (12 oz) cans of corn niblets, drained (not Green Giant)
3 Tbsp. cooking oil
1/2 cup sugar
1/2 cup vinegar
2 tsp. minced dried onions
1/2 tsp. salt
1/4 tsp. celery seed

In a bowl combine corn and oil. In a small saucepan combine all other ingredients. Cover and bring to boil. Reduce heat. Simmer two minutes. Add to corn mix. Cover and cool. Refrigerate several hours. Drain to serve.
