Toasted Coconut Bread rec.food.cooking/Nancy M. Schnepp (1992)
1 cup toasted coconut 2 cups unbleached flour 1 tbsp. baking powder 1/2 tsp. salt 3/4 cup sugar 1 egg, beaten 1/4 cup oil 1 cup whole milk 1 tsp. vanilla
Mix coconut, flour, baking powder, salt and sugar. Set aside. In separate bowl mix egg, oil, milk and vanilla, add to dry ingredients and stir until blended. Pour into greased and floured 9x5x3-inch loaf pan. Bake one hour in preheated 350 degree oven.
