Tropical Bran Bread

Source: Dole Foods
Yield: 24 muffins

1 cup fiber one cereal, crushed
1 cup canned pineapple juice
1 tsp vanilla
1 3/4 cups flour
3/4 cup sugar
1/3 cup butter
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
2 eggs

Heat oven to 350. Grease bottom only of loaf pan. Mix cereal, juice and vanilla in large bowl; let stand 10 minutes. Stir in remaining ingredients. Pour into pan.

Bake 55-60 minutes or until toothpick comes our clean. Cool 10 minutes, loosen sides from pan. Remove from pan. Cool completely on rack before slicing. Store tightly wrapped in refrigerator up to 1 week.

Variation: Stir in 1/2 cup raisin with the ingredients. Add 1/2 cup finely chopped walnuts.
