Sausage Omelet-Tortilla de Chorizo Servings 6 (To this omelet you can add shredded cheese or chopped ham intead of chorizos. You can substitute cream for the water)
6 eggs, separated 6 Tbsp. hot water 3/4 tsp. salt 1-1/2 Tbsp. butter 2/3 cup chorizos, cooked
In a bowl, beat egg yolks vigorously. Add water and seasonings, mix well. Beat egg whites until stiff. Add egg yolks to egg whites. In a skillet or omelet pan, melt butter. Add egg mixture into pan and cook over low heat until omelet is light brown and top is dry. Add chorizo, then fold omelet over. Serve immediately!
