Savory Corn Fritters From: Weight Watchers Healthy Life Style Cookbook Makes 8 fritters (2 fritters per serving)
l cup plus 2 teaspoons all-purpose flour l/4 tsp baking powder egg substitute to equal 1 egg l/2 cup frozen corn, thawed l/2 cup cream-style corn 2 tbsp finely chopped red bell pepper
Mix flour, baking powder, egg substitute, corns, and bell pepper.
Spray skillet with non-stick cooking spray. Drop batter by tablespoons, forming fritters. Cook over medium heat until bottoms are lightly browned, 2-3 minutes. Flip fritters and cook 2 minutes longer. Garnish with red bell pepper rings.
