COMPANY POTATOES
1/2 cup milk 1/2 cup shredded Cheddar cheese 1/2 cup butter 12 medium potatoes, boiled in jackets then sliced 1 green pepper, diced 1 red pepper, diced 1 onion, diced 1 Tbsp. parsley flakes salt and pepper to taste
In a medium saucepan, combine milk, cheese, and butter. Stir until melted and smooth.
Place the potatoes, peppers, and onions in a large bowl. Add parsley flakes, salt, and pepper. Add the cheese sauce to this mixture and gently mix together. Place the mixture in a 3 quart baking dish.
Cover with aluminum foil and bake at 400 degrees for 40-50 minutes or until potatoes are done.
