Garlic Meatballs in Lemon Sauce

serves 6

meatballs:
1 1/2 pounds extra lean ground beef
3 slices bread, torn into soft crumbs
4 cloves garlic, minced
2 tablespoons fresh parsley leaves, chopped
2 tablespoons fresh mint leaves, chopped
1 teaspoon paprika
1 teaspoon salt
pepper to taste
2 eggs

Lemon sauce:
1 8 oz can tomato sauce
grated rind from 2 lemons
1/4 cup lemon juice
salt and pepper to taste
1 tablespoon fresh mint leaves, minced

Combine all ingredients for the meatballs and form into walnut size balls. Place in slow cooker. Combine sauce ingredients and pour over meatballs. Cover and cook on low 4-5 hours. Serve over spaghetti or noodles or stuff a hero.
