Ambrosia Parfaits
1 (8 oz.) can mandarin orange segments, drained 1/4 cup blanched almonds, toasted & chopped 2 cups prepared whipped topping 1 pkg. instant coconut pudding 2 cups cold milk Mint sprigs
Reserve 5 orange segments for garnish. Fold oranges & almonds into topping.
Combine pudding with milk, beating slowly for 2 minutes.
Alternate topping & pudding in parfait glasses. Garnish with oranges & mint.
