Cocoa-Raisin Muffins net.cooks/Holly (1985) Makes 12
1 3/4 cups all-purpose flour 1/2 cup sugar 3 Tbsp. unsweetened cocoa powder 2 1/2 tsp. baking powder 1/2 tsp. ground cinnamon 1/4 tsp. salt 1/3 cup chopped nuts 1/3 cup raisins 1 beaten egg 3/4 cup milk 1/3 cup cooking oil
In a medium mixing bowl stir together flour, sugar, unsweetened cocoa powder, baking powder, cinnamon, and salt; stir in chopped nuts and raisins. Make a well in the center.
In a small mixing bowl combine the egg, milk, and oil; add all at once to dry ingredients. Stir just till moistened (batter should be lumpy). Grease 12 muffin cups or line with paper bake cups; fill 2/3 full. Bake in a 400 degree oven 18 to 20 minutes or till browned. Remove from pans; serve warm.
