Easy Microwave Lasagne: Serves 8-10 Source: Prevention's Quick & Healthy Cooking,Spring 1993.
This lasagne is not only easy but low-fat & incredibly delicious.
1/2 lb.lean ground beef,opt. 1 (32oz.) jar meatless marinara or spaghetti sauce 1/2 c.water 1 1/2 c.non-fat ricotta cheese 1 egg 1/4 tsp.black pepper 1/4 tsp.dried basil 1/4 tsp.minced garlic 1/4 tsp.dried oregano 8 lasagne noodles 8 oz.part-skim mozzarella cheese,shredded 1/2 c.Parmesan cheese
If using beef,crumble it into a large glass bowl.Mirowave on HIGH till beef is brown,2-3 minutes.Drain.Add the sauce & water to the bowl & mix.
In a medium bowl,combine the ricotta,egg,pepper,basil,garlic & oregano.Spoon 1/2 c.sauce in the bottm of a 8" x 12" microproof dish.Add one layer of the noodles,some of the ricotta mixture,some of the mozzarella cheese & then some sauce.Repeat for another layer.
Cover & cook for 8 minutes on HIGH,then 30-32 minutes on MEDIUM-LOW.Let stand 15 minutes before serving.Serve with the Parmesan cheese.
