TWICE-BAKED POTATOES DELUXE
6 baking potatoes salt and pepper to taste butter milk 1/4 cup chopped onion 3/4 cup grated Cheddar cheese 3/4 cup grated Monterey Jack cheese 1 16-oz. box frozen, chopped spinach, thawed and pressed dry
Preheat oven to 400 degrees. Prepare 6 baking potatoes and bake for 1 hour. Maintain oven temperature. While potatoes are hot, slice each potato in half lengthwise. Carefully scoop pulp into a large mixing bowl, leaving a thin shell. Mash potatoes, adding salt, pepper, and butter to taste and milk as needed. Stir in onion, Cheddar and Jack cheeses, add spinach. Spoon potato mixture back into the shells.
Bake potato halves for 20 minutes or until lightly browned. Serve immediately. Or freeze potatoes before reheating them. TO serve potatoes, remove as many as needed. Allow to thaw; place on a rimmed cookie sheet or ina baking dish. Bake in a preheated 400 degree oven about 20 minutes or until lightly browned. Makes 12 servings. |
