MYSTERY PECAN PIE
8-oz. cream cheese 1/3 plus 1/4 cup sugar, divided 1/4 tsp. salt 2 tsps. vanilla extract 4 eggs 1 1/4 cups pecans, chopped 1 cup light corn syrup 1 unbaked pie crust whipped cream
Preheat oven to 375 degrees. Beat together cream cheese, 1/3 cup sugar, salt, one teaspoon vanilla extract, and one egg. Pour into pie crust. Sprinkle pecans over cream cheese layer.
Beat together: 3 eggs, 1/4 cup sugar, one teaspoon vanilla extract and corn syrup. Pour this mixture over the pecan layer. bake for 35-40 minutes, until filling is firm. Refrigerate before serving. Top with whipped cream.
Serves 6-8.
