Debbie.D.,.AL (5:18:13 PM) : This cheesecake is the only one that I ever make for my family. I got the recipe from Susan Branch's HEART OF THE HOME COOKBOOK. It is easy, but oh, so delicious!
SUSAN BRANCH'S CHEESECAKE
1 (8 oz.) pkg. cheesecake, softened 1/2 cup sugar 1 tsp. lemon juice 1/2 tsp. vanilla extract dash salt 2 eggs 1 graham cracker crust Sour Cream Topping (optional)
Beat softened cream cheese till fluffy. Gradually blend in sugar, lemon juice, vanilla, and salt. Add eggs, one at a time; beat after each. Pour filling into crust.
Bake at 325 degrees F for 35-40 minutes or until filling is set. (If desired, add Sour Cream Topping and bake 10 minutes longer.) Cool. Chill several hours.
Top with cherry pie filling, blueberry pie filling, or drizzle chocolate on the top. Delicious! VARIATION:
SOUR CREAM TOPPING: 1 1/2 cups sour cream 3 tbsp. sugar 3/4 tsp. vanilla Combine ingredients for the topping and spoon over top of hot cheesecake and bake 10 more minutes as directed above. |
