Turkey-Veggie Meatballs or Burgers
rec.food.recipes/Paul Royko (1997)

These make a great tasty meatball mixed in with a good tomato sauce. But, there's no reason why you couldn't make patties and bake them or grill them for turkey burgers.

1-1/2 lbs. ground turkey
1/2 cup dried breadcrumbs (I use Italian-seasoned crumbs)
1/2 cup grated Parmesan cheese
1/3 cup finely chopped green onions
1/4 cup coarsely shredded carrot
1/4 cup coarsely shredded zucchini
1/4 cup chopped parsley
1/4 tsp salt
1/4 tsp pepper
1 large egg white
2 cloves garlic, minced
vegetable cooking spray

Preheat oven to 400F.

Combine all ingredients except cooking spray in a bowl; stir well. Shape mixture into 30 1-1/2-inch meatballs. Place on a broiler pan coated with cooking spray. Bake at 400F for 15 minutes or until cooked through.
