Peach Cobbler

Here is my favorite peach cobbler recipe. I would imagine you could use any fruit, but I'm partial to peach!

1 quart of peeled and sliced peaches
1/4 cup margarine
1/2 cup sugar
1 teaspoon baking powder
1 egg
1/2 cup milk
1 cup all purpose flour
2 Tablespoons lemon juice

Sift the flour and baking powder together. Cream the margarine and sugar, then add the egg and beat well. Add the milk and flour. Set aside.

Peel and slice peaches, enough to make 1 quart. Sweeten lightly with sugar and sprinkle with lemon juice. Place the peaches in a baking dish. Spoon the batter over the fruit, (do not stir!) and bake at 375 until the crust is brown, (about 30 minutes).

I like to eat mine warm with vanilla ice cream. It's good reheated, also. I just stick it back in the oven long enough to warm up. Course, it's good cold too!
