Banana Pound Cake Recipe By: Eunice
1 cup butter or margarine 4 eggs 1 1/2 cups sugar 1 cup mashed ripe bananas (3 medium) 1 teaspoon vanilla 2 1/2 cups sifted all-purpose flour 1 teaspoon baking powder 1/4 teaspoon ground nutmeg
In a large bowl cream butter with sugar. Beat in eggs one at a time, beating well after each addition. Blend in bananas and vanilla. Sift together flour, baking powder and nutmeg; blend into banana mixture. Turn into a greased and floured 9-inch tube pan. Bake in 350° F. oven for 1 hour and 10 minutes or until cake tester inserted in cake comes out clean. Cool 10 minutes; turn out of pan and cool completely. If desired, serve sprinkled with confectioners' sugar. |
