Apple Cake - 3 Versions rec.food.cooking/Sherry Yokim (1993)
Apple Cake - Mother's Recipe
6 tablespoons sugar 1 tablespoon baking powder 1 tablespoon cinnamon 6 apples - peeled, sliced 1 tablespoon vanilla
Mix dry ingredients together in small bowl. Mix with apples. Add vanilla. Let stand.
4 eggs 1 cup oil (vegetable, corn, safflower, etc) 2 cups sugar 3 cups flour
Beat eggs. Blend in oil. Gradually add sugar (These 3 steps can be done with a mixer or by hand, but it is easier to use a mixer!).
Stir in flour until all blended. Fold in apple mixture.
Pour into greased Bundt or angel cake pan. Bake at 375F for 1 hour 15 minutes or until toothpick inserted comes out clean.
Apple Cake - Mother-in-law's Recipe
1 cup sugar 2 cups diced apples 1 beaten egg 1/2 cup vegetable oil 1 1/2 cups flour 1 teaspoon baking soda 1/2 teaspoon cinnamon 1/2 teaspoon salt
Mix in order. Pour into a greased 8x8-inch pan. Bake at 350F for 30 minutes or until toothpick inserted comes out clean.
Apple Cake - My version
Notice that my m-i-l's recipe doubled is almost the same as my mother's. I sort of combine the two. I basically follow my mother's recipe (the method of combining things helps protect against possible lumps) but decrease the number of eggs to 2 or 3. This is a very HEAVY cake. I prefer the apples to be sliced but my husband likes them diced.
