Maple Syrup Cake with Maple Walnut Icing rec.food.recipes/JANIC412 (2001)
Cake 4 cup flour 4 tsp. baking powder 1/2 tsp. salt 3/4 cup butter, unsalted and softened 3/4 cup sugar 3 eggs 1 1/2 cup maple syrup 3/4 cup milk
Icing 2/3 cup butter 2/3 cup maple syrup 4 cup confectioners sugar 2/3 cup walnuts
Cake: Grease and flour three 9 inch cake pans. Preheat oven to 350.
Sift flour, baking powder and salt; set aside.
Cream butter and sugar. Add eggs, one at a time.
Mix maple syrup with milk. Add with flour mixture to creamed mixture. Mix well.
Divide into 3 pans. Make a depression in center of batter. Bake 30 to 35 minutes. I cool 15 minutes. Remove from pan. Cool.
Icing:
Cream butter, add sugar and syrup. Beat until smooth. Place cooled cake on plate. Frost with icing and a few chopped nuts. Repeat with next 2 layers. Cover top with rest of icing and nuts.
