Raisin Muffins with Sesame Ginger Topping Source: The California Raisin Marketing Board Makes 12 muffins
Sesame seed and ginger give these light muffins a crunchy topping and unique flavor.
3/4 cup California raisins 1/3 cup melted shortening 2 cups all-purpose flour 1/3 cup sugar 4 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon ginger 1/4 teaspoon cinnamon 1 egg 1 cup milk Sesame Ginger Topping (below)
Combine raisins with 1 teaspoon of the melted shortening; chop. Sift flour with sugar, baking powder, salt and spices; add raisins. Beat egg lightly; add milk and remaining shortening and blend into dry ingredients. Stir only until dry ingredients are moistened. Spoon into greased muffin pans and sprinkle with Sesame Ginger Topping. Bake at 425F for 20 minutes, or until browned. Let stand about 5 minutes, then remove from pans. Serve immediately.
Sesame Ginger Topping: Combine 1 tablespoon sesame seeds, 1 tablespoon sugar and 1/8 teaspoon ginger.
